Allergy check – Gluten-free, grain-free, sugar-free & dairy-free (substitute butter for olive oil)

Difficulty level – beginner

A great way to mix things up in the morning. This recipe is full of good fats, protein and nutrients that will get your energy sky high ready for the day ahead. Once made, the frittata can also be stored easily in the fridge and eaten cold.

Ingredients (serves 4):

  • 6 medium eggs
  • 4 bacon rashers (thinly sliced)
  • 4 broccoli florets (finely chopped)
  • 1/2 onion (diced)
  • 8 cherry tomatoes (halved)
  • S&P
  • Tbsp butter/olive oil/coconut oil
  • Tsp oregano (or your favourite)
  • Optional – finely slice and add any of your favourite ingredients e.g. mushrooms

Equipment:

  • 8 x 8 inch baking tray
  • Frying pan
  • Chopping board & knife
  • Jug & fork (to whisk the eggs)
  • Baking tray and paper

Method:

1. Whisk the 6 eggs in a jug

2. Melt your butter or oil in a frying pan and fry all of your ingredients (besides the egg) on a low-medium heat for 4-5 minutes

3. Pour the ingredients into the jug that your whisked eggs are in and stir well

4. Line your tray with a baking sheet and pour your mixture in. Place in a pre-heated oven on gas mark 5 for 15 minutes

5. Check after 15 minutes and put back in the oven for a further 5 minutes if the edges haven’t turned golden brown

Slice up and enjoy with a dollop of butter!
